Bison Roast with Garlic

  • 3-5lbs bison roast
  • ½ cup cooking wine or Italian dressing
  • 2 cloves of garlic cut into quarters
  • 1-12 oz container of beer
  • 2 small onions
  • 2 tbsp. Worcestershire or A-1 Sauce
  • 1 tsp dry mustard

Pepper all surfaces and sprinkle with garlic powder. Brown bison roast at HIGH temperature on BBQ or frying pan. Place all ingredients in a slow cooker or covered casserole. Add water to level of roast top. Cook slowly for 6-8 hours or bake at 250° and cook 6-8 hour
